If you like nuts, this is a good one. Here’s a tasty nut ball recipe I found off  the internet at www.hungryhealthygirl.com. I tweaked the recipe a tiny bit so I’m writing it how I made it:

Paleo Snack Balls or as I like to call them Ah-MAZE-Balls! (with the exclamation point):

1 Cup Raw Almonds
1 Cup Raw Walnuts (pieces or halves)
1 Cup unsweetened shredded coconut
10 Medjool Dates (pitted and rehydrated a bit)
2 tsp organic pure vanilla extract (or crushed whole vanilla bean)
1 tsp pure cinnamon
1/2 tsp salt
1/4 Cup Raw Almond Butter
1/4 Cup melted coconut oil
1/2 Cup water

-Combine pitted dates and water in a microwave-safe dish and microwave for about 40 seconds. Let sit until ready to add to mix.
-While dates are sitting, add almonds, walnuts and coconut to blender or food processor and pulse until ground into a fine nut flour. DISCARD water from the dates and add dates only to the nut flour.
-Add rest of ingredients and blend until thoroughly combined. You may need to stop an scrape down the side of blender or food processor every once in a while. You may also need to add a little more coconut oil if it seems too dry. (I dumped everything out into a mixing bowl and mixed by hand with a wooden spoon…)
-Roll into balls. Let set in the fridge until firm….or not. There’s no shame in eating this straight from the bowl!

*make these WLC rx level compliant by using crushed whole vanilla bean!
